Comfort Food : My grandmother’s Baked Rice Pudding Recipe

Sometimes in the winter, you just want a little comfort food.   I loved this as a child, and still do. You eat it hot, with a spoonful of sugar sprinkled over it, and add a little cold milk.

Rice Pudding

Baked Rice Pudding Recipe:

  • 2 Cups Milk & 1/2 Cup Rice : Cook in Pot, and when it is done, add 1/2 cup butter.
  • In a bowl, Mix:
  • 3 eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • Pour into a casserole dish with the rice mixture and sprinkle with cinnamon.
  • Bake at 325 for 1/2 hour, stir & bake for about 15-20 minutes more.

I like it for breakfast when I make up a batch.

    I love rice pudding! It always makes me think of my Dad who used to make it when I was young. He put raisins in it, too! I need to make rice pudding! And then make some bread pudding!

    I do love rice pudding but haven’t made it in years. It’s great that this recipe doesn’t require putting the pan in a water bath as I’m always so afraid I’ll burn myself adding the water.

  5. Rice pudding always brings to mind my paternal grandmother who made it. I don’t think I’ve ever made it? I guess cause I am not a sweet eater and for me this falls under sweets. I have developed I chocolate taste lately…which is not good! My gram put raisins in it too! Looks like a good recipe!

    My family is the odd one out, we never put raisins in our rice pudding. I have never made baked rice pudding. I am lactose intolerant now days so I use Almond milk. Puddings do not set up with almond milk without added thickner. I wonder if this would be different it sounds so good.

      Judy You have to use REAL Rice, lol…the old-fashioned kind not Minute or Success or anything since you have to cook it in the milK :) And then you have a nice REAL Rice Sticky Pot to clean up afterwards :)
