Sometimes in the winter, you just want a little comfort food. I loved this as a child, and still do. You eat it hot, with a spoonful of sugar sprinkled over it, and add a little cold milk.
Baked Rice Pudding Recipe:
- 2 Cups Milk & 1/2 Cup Rice : Cook in Pot, and when it is done, add 1/2 cup butter.
- In a bowl, Mix:
- 3 eggs
- 2 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- Pour into a casserole dish with the rice mixture and sprinkle with cinnamon.
- Bake at 325 for 1/2 hour, stir & bake for about 15-20 minutes more.
I like it for breakfast when I make up a batch.
